
There are some dishes that are more than just food—they’re memories on a plate. This chicken and vegetable rice recipe is exactly that for me. Passed down from my dad, this meal instantly takes me back to my childhood. It’s simple, wholesome, and packed with flavor, and no matter how many times I make it, it never gets old.

Chicken & Vegetable Tray Bake
Ingredients
- 1/3 cup olive oil (extra virgin)
- 1 kg chicken drumstick or chicken legs
- 1 green bell pepper
- 1 red bell pepper
- 1 large onion
- 200 g cherry/baby plum tomatoes
- 2 tbsp paprika
- 1 tsp smoked paprika
- 1 tsp all purpose seasoning
- 1 tsp garlic powder
- salt
- black pepper
- 1 cup rice (uncooked)
Instructions
- Pre-heat your oven to about 170ºC/340ºF. Clean your chicken and add it to oven proof dish or deep baking tray. Make sure it is big enough for the chicken and the veggies. Add all the seasoning, salt and pepper to taste and poor over olive oil. I know that it might seems bit too much olive oil, but trust the process, it is really important. Rub everything together until the chicken is well coated and place into oven for about 25-30 mins.
- Cut your plum tomatoes in half and slice finely onion and peppers. Once the chicken is ready, scatter the vegetables over the chicken and place is back to the oven for another 20-25 mins until the vegetables are soft. In the meantime, cook a cup of rice and set aside.
- Once your chicken and vegetables are ready, remove chicken from the tray and mix your cooked rice with the veggies and all the juices. Make sure you mix everything properly to incorporate all the flavours together. Add your chicken back in the tray until ready to serve.
